Valentine’s Day – You either love it or your hate it. Want to know how I celebrated? By cooking a delicious meal.
An old friend, Carlos, texted me today saying “In Mexico, today would be called “Day of Love and Friendship.” I absolutely love this. Who said that the day just has to be a celebration of romantic love?
So far in my life, I’ve never had a romantic valentine. To be honest, I don’t mind too much right now. My Valentine’s Day is never terrible. One year, my friends and I went to go see a chic flick together. Another year, I was alone – living in Nashville, and decided to order in Italian food, light a candle, and watch my favorite movie. I always try to make the day about having fun and celebrating love – whether that be in friendship, family, or self.
This year I spent it with my mom and my roommate. Over the weekend, my mom and I went grocery shopping and planned out a menu for what we’d like. We decided on scallops, a vegetable medley, and pearled couscous, along with salted caramel gelato for dessert. When I typically make meals on my own, it’s a combination of something easy, cheap, and generally the typical items I have in my freezer or pantry.
While this meal wasn’t too hard to make and not very expensive (minus the scallops), it was definitely a treat. We thoughtfully planned out what we wanted to get and hunted down the ingredients I didn’t already have.
Now guys, this meal was beyond delicious. It probably took us about an hour to make (although my mom did a little bit of prep beforehand) and devoured in just a few minutes. It’s hard to slow down your eating when everything tastes so good 😛
Even though another year went by without a romantic valentine, I wouldn’t have wanted to spend the day any other way. 🙂
